  • ½ cup popcorn kernels about 12 cups popped
  • 2 tbsp oil
  • 1 cup sugar
  • ½ cup butter
  • ¼ cup corn syrup
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Method
 

  1. Pop the corn in oil. Set aside.
  2. In a saucepan, melt sugar, butter, and syrup. Boil until golden.
  3. Remove from heat. Add baking soda, salt, and vanilla. Stir quickly.
  4. Pour caramel over popcorn. Mix well.
  5. Spread on a tray. Bake at 250°F (120°C) for 45 minutes. Stir every 15 minutes.
  6. Cool completely. Break into pieces. Enjoy!
